Fish Chowder

Ingredients

  1. 1 medium onion, chopped
  2. 2 carrots, diced
  3. 1 stalk celery, sliced
  4. 2 Tbsp. butter or margarine, divided
  5. 1 (16 oz.) pkg. frozen fish fillets
  6. 2 potatoes, peeled and diced
  7. 1 bay leaf
  8. 1 tsp. salt
  9. 1/4 tsp. thyme
  10. 1/4 tsp. pepper
  11. 1 c. dry white wine or water
  12. 2 c. milk
  13. 1 Tbsp. chopped parsley (optional)

Directions

  1. In 3-quart saucepan, over medium heat, saute onion, carrots and celery in 1 tablespoon butter or margarine.
  2. Add fish, potatoes, bay leaf, salt, thyme, pepper and wine.
  3. Cover; simmer 20 minutes.
  4. With fork, break fish into chunks.
  5. Add milk and remaining butter.
  6. Discard bay leaf.
  7. Sprinkle with parsley. Makes 4 servings.
