Quiche Lorraine

Ingredients

  1. pastry for 1 (9-inch) pie crust
  2. 12 slices bacon, crisp and crumbled
  3. 1 c. shredded Swiss cheese
  4. 1/3 c. finely chopped onion
  5. 4 eggs
  6. 2 c. half and half
  7. 3/4 tsp. salt
  8. 1/4 tsp. pepper
  9. 1/8 tsp. cayenne pepper

Directions

  1. Prepare pie shell.
  2. Sprinkle bacon, cheese and onion in pastry.
  3. Blend eggs slightly.
  4. Beat in remaining ingredients. Pour egg mixture into pie pan.
  5. Cook, uncovered, at 425° for 15 minutes.
  6. Reduce to 300° and cook until knife inserted in center comes out clean (about 30 minutes).
  7. Let stand 10 minutes before cutting.
