Louisiana Beans And Rice

Ingredients

  1. 1 c. raw rice
  2. 2 Tbsp. olive oil
  3. 1 green pepper, minced
  4. 2 ribs celery, chopped
  5. 1/8 tsp. garlic powder
  6. 2 Tbsp. margarine
  7. 2 c. chicken broth
  8. 1 tsp. salt
  9. 1/2 bay leaf, crushed
  10. 1 can red kidney beans, drained

Directions

  1. Fry rice in hot oil until rice is a golden color.
  2. Saute pepper, celery, onion and garlic powder in margarine. Stir into rice. Add chicken broth, salt, bay leaf and beans.
  3. Put a piece of wax paper on top, then cover with a lid.
  4. Bake in preheated oven at 325° for 45 minutes. Fluff before serving.
