Persian Potato Salad

Ingredients

  1. 6 white potatoes
  2. 1 (15 oz.) can sweet green peas
  3. 1 whole cut up boiled chicken
  4. 1 1/2 c. mayonnaise
  5. 1 tsp. salt
  6. 1 small jar green salad olives
  7. cherry tomatoes (about 10)

Directions

  1. Dice, boil and drain the potatoes.
  2. Drain peas.
  3. Debone and dice the chicken.
  4. Mix all ingredients together, saving 1/2 cup mayonnaise.
  5. Form into an oblong shape on a meat platter.
  6. Spread leftover mayonnaise on top.
  7. Decorate with olives and tomatoes. Serves 12.
