Old-Fashioned Ham And Bean Soup

Ingredients

  1. 1 lb. dried kidney beans
  2. 3 qt. water
  3. 1 meaty ham bone
  4. 1/2 c. chopped onion
  5. 1/2 c. chopped celery
  6. 1/2 c. chopped carrots
  7. 4 whole cloves
  8. 1 bay leaf
  9. 1 tsp. salt
  10. 1/4 tsp. pepper

Directions

  1. Place beans in water in a large pot; bring to a boil.
  2. Remove from heat.
  3. Cover and let stand for 1 hour.
  4. Add ham bone, onion, celery, carrots and all spices.
  5. Simmer for 2 hours or until beans are tender.
  6. Remove ham bone and cut meat; return to soup.
  7. Remove bay leaf.
  8. Garnish with hard-cooked egg yolk slices.
  9. Serves 10 to 12.
