Quick And Easy Mexican Lasagna



  1. 1 lb. lean ground beef
  2. 1 small diced onion
  3. 1 pkg. taco seasoning mix
  4. 1 can chili with beans (hot if you prefer)
  5. 1 small can Ro-Tel diced tomatoes and onions
  6. 1 pkg. (3 c.) Mexican cheese, shredded
  7. 10-inch tortillas


  1. Brown ground beef, then add diced onion. Add seasoning mix, chili and diced tomatoes and onions to the beef mixture. Put layer of 10-inch tortillas in a 9 x 8-inch pan. Top with a layer of meat mixture, a layer of cheese, a layer of tortillas, a layer of meat mixture and a layer of cheese. Bake at 350° for about 20 to 30 minutes.
