Sweet Onion Casserole

Ingredients

  1. 1/2 c. long grain rice, uncooked
  2. 7 to 8 c. Imperial, Vidalia or other sweet onion, chopped coarsely
  3. 1/4 c. melted butter
  4. 1 c. grated Swiss cheese
  5. 2/3 c. half and half
  6. 1 tsp. salt

Directions

  1. Cook rice in 5 cups boiling water for 5 minutes.
  2. Drain; set aside.
  3. Cook onions in butter in large skillet until limp but not browned.
  4. Combine all ingredients.
  5. Mix well and pour into greased 2-quart casserole.
  6. Bake at 350° for 1 hour.
  7. Yields 8 to 10 servings.
