Italian Chicken Soup

Ingredients

  1. 4 chicken breast halves
  2. 1 onion
  3. 1 carrot
  4. 2 large tomatoes
  5. 1/2 lb. green beans
  6. 1 small yellow squash
  7. 1/2 c. small elbow macaroni
  8. 1 Tbsp. salad oil
  9. 2 cans chicken broth
  10. 1 can white kidney beans, drained
  11. 1 (10 oz.) pkg. frozen chopped spinach
  12. grated Parmesan cheese

Directions

  1. Cut each chicken breast half lengthwise in half, then cut halves crosswise into 1/4-inch thick strips.
  2. Chop onion and carrot.
  3. Peel, seed and dice tomatoes.
  4. Trim off ends of green beans; cut each diagonally in half.
  5. Cut yellow squash lengthwise in half, then cut halves crosswise into 1/2-inch pieces.
  6. Prepare macaroni as label directs; drain.
