Ricotta Pie(Italian Easter Pie)
- 1/2 lb. rice, cooked and cooled under running water
- 6 oz. pkg. chocolate chips
- 1 tsp. vanilla or lemon or orange
- 6 eggs
- 1 1/2 lb. Ricotta cheese
- sugar to taste
- 2 pie crusts
- Mix all ingredients and pour in pie crust.
- Top with crust and bake at 350° to 375° until set.
