Spoon Bread

Ingredients

  1. 1 c. yellow corn meal
  2. 1/2 tsp. salt
  3. 4 eggs, beaten
  4. 2 c. boiling water
  5. 2 Tbsp. butter
  6. 1 c. sweet milk

Directions

  1. Stir corn meal into boiling water for 1 minute; remove from heat.
  2. Add butter; beat well.
  3. Add beaten eggs; beat well.
  4. Beat in milk and mix all ingredients together thoroughly.
  5. Pour into hot buttered 3-quart Pyrex dish and bake, uncovered, in a preheated 400° oven for about 40 minutes.
