Pickled Beans Ala Jaussaud'S

Ingredients

  1. 1 lb. navy beans
  2. 1 1/2 tsp. salt
  3. 1/2 c. finely chopped onion
  4. 2 cloves crushed garlic
  5. 1/3 to 1/2 c. chopped parsley
  6. 1/3 c. oil
  7. 1/2 c. cider vinegar
  8. 1 tsp. salt
  9. 1/4 tsp. coarse pepper

Directions

  1. Soak beans overnight.
  2. Drain and cover with fresh water.
  3. Add 1 1/2 teaspoons salt.
  4. Cook at a simmer 1 to 1 1/2 hours or until tender.
  5. Drain and rinse well.
  6. Combine all other ingredients. Pour over drained beans.
  7. Chill several hours.
  8. Keeps well and improves with time.
