Mexican Hominy

Ingredients

  1. 2 onions, chopped
  2. 2 cloves garlic, minced
  3. 2 Tbsp. vegetable oil
  4. 1 qt. chicken broth
  5. 1 lb. lean boneless pork, cut into 1/2-inch pieces
  6. 3 dried red chiles, washed, stemmed, seeded and finely chopped
  7. 1 tsp. dried whole oregano
  8. 1/2 tsp. coarsely ground black pepper
  9. 1/4 lb. hot Italian sausage, sliced
  10. 1 (15 oz.) can white hominy, drained

Directions

  1. Saute onion and garlic in oil in a large Dutch oven until tender.
  2. Add chicken broth, pork, chiles, oregano and pepper; bring to a boil.
  3. Cover, reduce heat and simmer 2 hours.
