Stuffed Tuscany Tenderloin (Spinach)

Ingredients

  1. 1 onion, diced
  2. 2 Tbsp. olive oil
  3. 1/2 lb. fresh spinach, chopped
  4. 1/2 tsp. salt
  5. 1/2 tsp. pepper
  6. 1/3 c. Parmesan cheese
  7. 3 Tbsp. drained and chopped dried tomatoes in oil
  8. 1 (4 lb.) beef tenderloin, trimmed

Directions

  1. Saute onion in hot oil in a skillet over medium heat until tender. Add spinach, salt and pepper; saute 1 minute. Remove from heat. Stir in Parmesan cheese and tomatoes.
