Pineapple Lime Mold

Ingredients

  1. 1 1/2 c. cold water
  2. 1 (3 oz.) pkg. lime jello
  3. 1 Tbsp. lemon juice
  4. 1 (8 oz.) pkg. cream cheese, softened
  5. 2 (8 oz.) cans crushed pineapple, drained
  6. 1 1/2 c. Kraft miniature marshmallows
  7. 1/2 c. chopped nuts (optional)
  8. shredded lettuce

Directions

  1. Bring 1 cup water to boil; stir in jello until dissolved.
  2. Add remaining 1/2 cup water and juice.
  3. Gradually add jello to cream cheese; mix until blended.
  4. Chill until thickened but not set; fold in pineapple, marshmallows and nuts.
  5. Pour into 1-quart mold. Chill until firm.
  6. Turn out onto serving plate, surrounded with lettuce.
  7. Serve with assorted fresh fruits.
