- 2 eggs, beaten
- 3 Tbsp. oil
- 1 c. chopped shrimp, ham, pork or beef
- 1/2 c. green onions, thinly sliced
- 4 c. cold cooked rice
- 4 Tbsp. soy sauce
- 1/2 tsp. sugar
- salt, if needed
- Fry beaten eggs until firm in the oil, remove from heat and mash with fork.
- Return eggs to stove with meat.
- Add onion.
- Cook over medium heat, stirring constantly for 3 to 4 minutes.
- Add rice and mix, then add soy sauce, sugar and salt if needed.
- Stir until rice is hot.
