Casserole-Barbecued Chicken

Ingredients

  1. 3 lb. chicken, cut up
  2. 1/2 c. flour
  3. 2 tsp. salt
  4. 1/2 c. (or more) fat
  5. 1 sliced onion
  6. 1/2 c. chopped celery
  7. 1/4 c. chopped green pepper
  8. 1 c. ketchup
  9. 1 c. water
  10. 2 Tbsp. Worcestershire
  11. 2 Tbsp. brown sugar
  12. 1/4 tsp. pepper
  13. 1 pkg. frozen whole kernel corn (optional)
  14. 4 large boneless breast halves or 8 small
  15. 1/2 tsp. salt
  16. 1/4 to 1/2 tsp. black pepper
  17. 2 Tbsp. salad or olive oil
  18. 2 Tbsp. butter
  19. 3 Tbsp. chopped chives or green onions
  20. juice of 1/2 lime or lemon
  21. 3 Tbsp. chopped parsley
  22. 1/4 c. chicken broth
  23. 2 tsp. Dijon mustard
  24. 2 Tbsp. brandy or cognac

Directions

  1. Place chicken breast halves between sheets of wax paper or plastic wrap.
  2. Pound slightly with mallet.
  3. Sprinkle with salt and pepper.
