Polish Potato Pancakes
- 6 medium potatoes, peeled and grated
- 2 eggs
- 2 medium onions, grated
- 2 tsp. salt
- 1/2 c. flour
- Beat eggs in a large bowl.
- Stir in potatoes, onions, salt and flour.
- Drop spoonfuls into frying pan, well covered with melted oleo or butter.
- Flatten and brown on both sides.
- Serve with sour cream or syrup.
