Easy Fruit Cake

Ingredients

  1. 1 box (18 1/4 oz) yellow cake mix
  2. 1 c. applesauce
  3. 4 eggs, slightly beaten
  4. 2 tsp. lemon extract
  5. 2 tsp. orange extract
  6. 1 lb. fruitcake mix (mixed and dried candied fruit)
  7. 1/2 lb. chopped dates
  8. 1/2 lb. seedless raisins
  9. 2 c. chopped pecans
  10. 1/4 c. all purpose flour

Directions

  1. Combine first 5 ingredients.
  2. Mix well.
  3. Toss fruit and pecans with flour to coat.
  4. Stir fruit and nuts into cake mix. Mix well.
  5. Pour into two 9 x 5 x 3 inch loaf pans greased and lined with waxed paper.
  6. Bake at 275° for 1 and 3/4 hours or until cake tests done.
  7. Makes 2 cakes.
  8. Soak and baste with orange juice for a few days (2 to 3 days should be enough...too long soaking makes cake tear when cut).
