Homemade Salami

Ingredients

  1. 2 lb. ground beef
  2. 3 Tbsp. mustard seed
  3. 3 tsp. garlic powder
  4. 1/2 tsp. cayenne pepper
  5. coarse ground pepper or peppercorns as desired
  6. 3 Tbsp. Morton quick-cure salt
  7. 1 c. water
  8. 3 tsp. onion powder

Directions

  1. Mix all ingredients well.
  2. Make into log rolls; roll in foil. Refrigerate 24 to 36 hours.
  3. Pierce foil with an ice pick; back on rack for 3 hours at 250°.
