Strawberry Vinegar



  1. 4 c. fresh strawberries, sliced
  2. 1 c. white wine vinegar
  3. 2 tsp. sugar


  1. Combine strawberries and vinegar in a bowl, cover and let stand at room temperature 24 hours; stir occasionally.
  2. Strain mixture through cheesecloth and discard all seeds.
  3. Stir in sugar and bring to a boil.
  4. Remove from heat and let cool.
  5. Pour vinegar into decorative jars and seal.
  6. Yields about 2 cups.
  7. Serve over salads.
