Bacon Potato Soup

Ingredients

  1. 2 medium onions, chopped
  2. 1/2 (6 oz.) pkg. Canadian bacon
  3. 2 c. water
  4. 4 medium potatoes, cubed
  5. 1 (12 oz.) can evaporated skim milk
  6. 1 pkg. Butter Buds
  7. 1/4 tsp. salt
  8. 1/8 tsp. pepper

Directions

  1. Spray a saucepan with nonstick cooking spray.
  2. Add onions and bacon.
  3. Cook and stir over medium heat until onion is tender but not brown.
  4. Stir in water and potatoes.
  5. Bring to boil; reduce heat.
  6. Cover and simmer 10 to 15 minutes or until potatoes are tender.
  7. Use a fork and mash some potatoes.
  8. Stir in milk, butter seasoning, salt and pepper.
  9. Cook and stir over medium heat until heated through.
  10. Do not boil.
  11. Ladle into bowls; serve with light sour cream and chives, if desired.
