Patty'S Potato Soup
- 6 medium potatoes, peeled and diced
- 1/4 c. chopped onions
- 1/4 c. milk
- 1 c. corn, drained
- 1 Tbsp. butter
- Add potatoes, onions, corn and butter into a medium stewing pot filled halfway up with water.
- Cook on medium heat for approximately 60 minutes.
- Stir every 15 minutes and add water if needed to avoid scorching.
- When potatoes are soft to the touch, add milk and cook on low for approximately 15 minutes.
- Dish into bowls.
- Garnish with parsley and serve.
