Taco Casserole

Ingredients

  1. 1 lb. hamburg
  2. 1 pkg. taco seasoning mix
  3. 1/2 c. water
  4. 1 can whole corn, drained
  5. 1/2 c. chopped green pepper
  6. 1 (8 oz.) can tomato sauce
  7. 1 (8 1/2 oz.) pkg. corn muffin mix
  8. 1 (2.8 oz.) can Durkee's French fried onions
  9. 1/3 c. shredded Cheddar cheese

Directions

  1. Brown meat.
  2. Drain off fat.
  3. Stir in taco seasoning, water, corn, green pepper and tomato sauce.
  4. Pour into greased 2-quart casserole dish.
  5. Prepare muffin mix and add to it the crumbled French fried onions.
  6. Spoon muffin mixture over meat filling in dish; smoothing it even and to the edge of dish.
  7. Bake, uncovered, at 400° for 20 minutes.
  8. Top with cheese and bake 1 to 2 minutes longer.
