Sweet Potato Croquettes



  1. 2 c. mashed sweet potatoes
  2. 2 Tbsp. flour
  3. 3/4 tsp. salt
  4. 1 beaten egg


  1. Cook, peel and mash sweet potatoes.
  2. Add flour, salt and egg; mix well.
  3. Chill mixture in refrigerator overnight.
  4. Place bread crumbs on a piece of wax paper.
  5. With spoon, put enough mixture into crumbs to form a log about 2-inches long and 3/4-inches in diameter.
  6. Coat entire log with crumbs.
  7. Lay single on flat try and chill before frying in deep oil (use deep fryer).
