Pork In Cider Sauce

Ingredients

  1. 1 lb. boneless pork, cut into bite size strips
  2. 1 Tbsp. oil
  3. 1/2 c. apple cider
  4. 1/4 c. onion, chopped
  5. 4 tsp. cornstarch
  6. 1 Tbsp. brown sugar
  7. 1/2 tsp. salt
  8. 1/4 tsp. cinnamon
  9. 1/2 c. apple cider
  10. 2 Tbsp. vinegar
  11. 1 medium apple, coarsely chopped
  12. 2 c. hot cooked rice or chow mein noodles

Directions

  1. In large saucepan or Dutch oven, brown pork in oil; drain off oil.
  2. Add the first 1/2 cup cider and onion.
  3. Bring to boil. Reduce heat, cover and simmer for 40 minutes, or until meat is tender.
  4. Combine cornstarch, brown sugar, salt and cinnamon in a bowl.
  5. Blend in the remaining 1/2 cup cider and vinegar.
  6. Add to pork mixture, along with apple.
  7. Cook and stir until mixture is thickened, then cook and stir about 2 minutes more.
  8. Serve over hot rice or warm noodles.
  9. Makes 4 servings.
