Spinach Tortellini Soup
- 1 small onion, chopped
- 2 carrots, thinly sliced
- 5 c. chicken broth
- 1 (9 oz.) pkg. cheese or meat filled tortellini pasta
- 1/2 (5 oz.) pkg. fresh spinach, coarsely chopped
- Combine onion, carrot and broth; bring to a boil. Add tortellini; reduce heat. Simmer 4 minutes. Add spinach; stir and simmer 4 minutes or until carrots are tender.
