Noodle Cheese Casserole

Ingredients

  1. 3 qt. boiling water
  2. 3 tsp. salt
  3. 3 1/2 c. wide noodles
  4. 1/4 c. minced onion
  5. 1/4 c. minced green pepper
  6. 1/2 stick margarine
  7. 2 tsp. salt
  8. dash of pepper
  9. 1 tsp. celery seed
  10. 1 1/3 c. milk
  11. 1 lb. cottage cheese
  12. 2 Tbsp. lemon juice
  13. 3 Tbsp. flour

Directions

  1. Break the noodles into 1 1/2-inch pieces; cook in the boiling, salted water until tender, about 10 minutes, stirring often.
  2. Drain thoroughly.
  3. Heat oven to 350°.
  4. In saucepan, saute onion and green pepper in butter for about 3 minutes.
  5. Stir in the flour and seasonings, then stir in the milk gradually and cook, stirring, until the sauce is smooth and thick.
  6. Grease a 2-quart casserole. Turn the sauce into it.
  7. Add noodles, cottage cheese and lemon juice; toss until well blended.
  8. Sprinkle with paprika.
  9. Bake, uncovered, for 40 to 50 minutes.
  10. Serves 4 to 6.
