Squash Croquettes

Ingredients

  1. 3 lb. yellow squash, sliced
  2. 3 eggs, beaten
  3. 2 c. cornbread crumbs
  4. 2 Tbsp. finely chopped onion
  5. 3 Tbsp. butter or margarine, melted
  6. 1 c. cracker crumbs
  7. vegetable oil

Directions

  1. Cook squash, covered, in a small amount of boiling, salted water, 10 to 15 minutes or until tender.
  2. Drain well and mash. Combine squash and next 4 ingredients; mix well.
  3. Shape mixture into 12 croquettes.
  4. Roll in cracker crumbs.
  5. Fry in deep hot oil (375°) for 3 to 5 minutes or until golden brown.
  6. Drain on paper towels.
  7. Yield: 12 servings.
