Freeze And Bake Rolls

Ingredients

  1. 2 pkg. active dry yeast
  2. 1 1/2 c. warm water
  3. 1/2 c. + 2 tsp. sugar, divided
  4. 1/4 c. vegetable oil
  5. 4 tsp. salt
  6. 7 1/2 to 8 1/2 c. all-purpose flour
  7. butter or margarine, melted

Directions

  1. In a large mixing bowl, dissolve yeast in water.
  2. Add 2 teaspoons sugar; let stand for 5 minutes.
  3. Add milk, oil, salt and remaining sugar.
  4. Add enough flour to form a stiff dough.
  5. Turn out onto a floured surface; knead until smooth and elastic, about 6 to 8 minutes.
  6. Place in a greased bowl, turning once to grease top.
  7. Cover and let rise in a warm place until doubled, about 1 1/2 hours.
  8. Punch dough down.
  9. Divide into four pieces.
  10. Cover three pieces with plastic wrap.
  11. Divide one piece into 12 balls. Place rolls on greased baking sheets; brush with melted butter. Cover and let rise until doubled, about 20 to 30 minutes.
  12. To serve immediately, bake at 375° for 15 to 18 minutes.
  13. To freeze for later use, partially bake at 300° for 15 minutes.
  14. Allow to cool; freeze.
  15. Reheat frozen rolls at 375° for 12 to 15 minutes or until browned.
  16. Yield:
  17. 4 dozen.
