Apricot Salad

Ingredients

  1. 1 c. water
  2. 1 large box apricot Jell-O or 2 small
  3. 1 large can crushed pineapple with juice
  4. 8 oz. cream cheese
  5. 1/4 c. sugar
  6. 1 can junior size apricot tapioca baby food
  7. 1 large container Cool Whip
  8. 1 c. ground pecans

Directions

  1. Boil the first 3 ingredients together for 5 minutes and cool. Mix cream cheese, baby food and sugar.
  2. Add the cheese mixture to the slightly set Jell-O.
  3. Then add the Cool Whip and pecans.
  4. This makes a large recipe, to make a smaller salad, use 1/2 cup less water.
