Zucchini Cake(Microwave)

Ingredients

  1. 2 c. sugar
  2. 3 eggs
  3. 2 tsp. vanilla
  4. 2 1/2 c. all-purpose flour
  5. 1 1/2 tsp. cinnamon
  6. 1 tsp. baking soda
  7. 1/2 tsp. salt
  8. 1/2 tsp. baking powder
  9. 1/2 tsp. nutmeg
  10. 2 c. grated zucchini
  11. 1 c. chopped nuts
  12. 1 (8 oz.) can crushed pineapple, drained
  13. 1/4 c. graham cracker crumbs
  14. 1 c. vegetable oil

Directions

  1. Combine sugar and oil in mixing bowl.
  2. Beat in eggs and vanilla.
  3. Blend flour, cinnamon, soda, salt, baking powder and nutmeg in medium bowl.
  4. Stir flour mixture into sugar mixture. Add zucchini, nuts and pineapple.
  5. Stir until well blended. Grease 10-cup plastic or ceramic tube dish.
  6. Coat with graham cracker crumbs.
  7. Pour batter into tube dish.
  8. Cook on level 7 for 20 to 25 minutes or until inserted toothpick comes out clean. Turn quarter turn halfway through cooking time.
  9. Let stand for 10 minutes.
  10. Invert on serving platter.
