Beef Or Chicken Enchiladas

Ingredients

  1. 1 Tbsp. butter or margarine
  2. 2 medium onions, chopped
  3. 1 garlic clove, minced
  4. 2 Tbsp. all-purpose flour
  5. 1 c. chicken broth
  6. 1 c. milk
  7. 2 (4 oz. each) cans chopped green chilies
  8. sour cream and salsa
  9. 1/4 tsp. salt
  10. 1/4 tsp. ground cumin
  11. 12 flour or corn tortillas
  12. 1 1/2 c. shredded cooked beef or chicken
  13. 1 c. shredded Monterey Jack cheese
  14. 1 c. shredded Cheddar cheese
  15. 2 green onions with tops, thinly sliced

Directions

  1. In a saucepan, melt butter over medium heat.
  2. Saute onion and garlic until onion is tender.
  3. Blend in flour.
  4. Stir in broth, milk, chilies, salt and cumin.
  5. Cook and stir until thickened and bubbly.
  6. Reduce heat; simmer 5 minutes, stirring occasionally. Set aside.
