Ingredients

  1. 1 pkg. cheese tortellini (uncooked)
  2. 3 c. fresh broccoli florets (can substitute frozen broccoli/cauliflower)
  3. 1 c. plain low-fat yogurt
  4. 1/4 c. reduced-calorie mayonnaise
  5. 1 tsp. cider vinegar
  6. 2 tsp. dried parsley or 2 Tbsp. fresh
  7. 2 tsp. Italian seasoning
  8. 1/8 tsp. garlic powder
  9. 1 lb. crab meat (surimi)

Directions

  1. This refreshing and light crab salad makes a perfect entree for a luncheon or "covered dish" church supper.
  2. Your budget determines the "degree" of crab in your Crab Louie.
  3. Can be made in smaller portions for a party appetizer.
