Lemon-Dipped Blueberry Muffins

Ingredients

  1. 1 3/4 c. all-purpose flour
  2. 1/2 c. sugar
  3. 2 1/2 tsp. baking powder
  4. 3/4 tsp. salt
  5. 1 egg, slightly beaten
  6. 3/4 c. milk
  7. sugar
  8. 1/3 c. vegetable oil
  9. 1 c. fresh or frozen blueberries
  10. 2 Tbsp. sugar
  11. 2 tsp. grated lemon rind
  12. 1/2 tsp. lemon juice

Directions

  1. Combine flour, 1/2 cup sugar, baking powder and salt in a large bowl; make a well in center of mixture.
  2. Combine egg, milk and oil. Add liquid mixture to dry ingredients, stirring just until dry ingredients are moistened.
  3. Set aside.
  4. Toss blueberries with 2 tablespoons sugar and lemon rind; fold berries into batter.
  5. Spoon batter into greased or paper lined muffin pans, filling 2/3 full. Bake at 400° until golden brown.
  6. Remove from pans and set aside. Combine melted butter and lemon juice.
  7. Dip tops of warm muffins in butter mixture, then sugar.
  8. Yield:
  9. 12 muffins.
