Baked Lima Beans
- 1 lb. lima beans
- 1 lb. brown sugar
- 1 lb. bacon
- 5 to 6 medium onions
- 1 tsp. soda
- salt and pepper, to taste
- Soak beans overnight in large pot as they will swell.
- Drain. Put fresh water on them.
- Add 1 teaspoon soda, 1/2 bacon, 2 onions, salt and pepper.
- Cook for 1 hour.
- Drain, but save the juice.
- In baking dish, put beans, rest of the bacon, onions and brown sugar.
- Bake at 325° for 3 hours.
- Add extra juice while baking if they get too dry.
