Cherry Topsy-Turvy Pudding

Ingredients

  1. 2 Tbsp. butter
  2. 1 1/4 c. sugar, divided
  3. 1 c. flour
  4. 1 tsp. baking powder
  5. 1/8 tsp. salt
  6. 3/4 c. milk
  7. 1 1/2 c. canned tart cherries (reserve the juice)
  8. 1/4 c. cherry juice

Directions

  1. Cream together butter and 1 cup sugar.
  2. Sift together flour, baking powder and salt.
  3. Add alternately with milk to creamed mixture.
  4. Pour into greased casserole dish.
  5. Combine cherries with remaining 1/4 cup sugar and 1/4 cup reserved cherry juice.
  6. Heat cherry mixture and pour over batter.
  7. Bake at 350° for 35 to 40 minutes.
  8. Serves 6.
