Scottish Shortbread



  1. 1/2 c. (1 stick) unsalted butter
  2. 2 c. all-purpose flour
  3. 1/4 c. sugar
  4. pinch of salt


  1. Cut butter into small pieces and set aside to warm to room temperature.
  2. Grease an 8 x 8-inch square (not glass) baking pan with butter and set aside.
  3. Sift together dry ingredients in mixing bowl.
  4. Add the butter pieces and rub in with fingers. Knead mixture gently to make a soft dough.
  5. Press into the prepared pan and flatten, using fingertips.
  6. Prick all over with a fork and bake in a preheated 325° oven for 30 to 35 minutes or until a pale golden color.
  7. Cool slightly, sprinkle with a little granulated sugar and cut into 1 x 2-inch fingers.
  8. Cool on a wire rack and store in an airtight container.
