Minestrone Soup

Ingredients

  1. 1 c. thinly sliced carrots
  2. 1 c. sliced celery
  3. 1/2 c. chopped onions
  4. 1 clove garlic, minced
  5. 2 Tbsp. margarine
  6. 2 cans (15 oz.) Chef Boyardee Beefogetti
  7. 1 can chickpeas, drained
  8. 2 c. water
  9. 2 beef bouillon cubes
  10. 1/2 tsp. salt
  11. 1/4 tsp. crushed basil
  12. 1/4 tsp. pepper
  13. Parmesan cheese

Directions

  1. In a 2-quart saucepan, saute carrots, celery, onions
  2. and garlic in margarine.
  3. Add remaining ingredients except cheese. Simmer, covered, for 15 minutes.
  4. Top each serving with Parmesan cheese. Serves six.
