Corn Meal Muffins

Ingredients
- 1 c. corn meal
- 2 Tbsp. brown sugar
- 3/4 tsp. baking soda
- 2 eggs, well beaten
- 1 1/2 c. sour milk
- 1 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1/4 c. melted bacon fat
Directions
- Sift flour.
- Measure and sift with baking soda, salt and baking powder.
- Mix with corn meal.
- Combine bacon fat, sugar and eggs.
- Add sour milk.
- Combine with dry ingredients.
- Beat only until smooth.
- Fill well-oiled muffin pan 2/3 full.
- Bake in hot oven (435°) for 15 to 20 minutes.
