Low-Calorie Pumpkin Pie

Ingredients

  1. 1 (16 oz.) can solid pack pumpkin
  2. 1 (13 oz.) can evaporated skim milk
  3. 1 egg
  4. 2 egg whites
  5. 1/2 c. biscuit mix (Bisquick type)
  6. 2 Tbsp. sugar
  7. 6 packets sugar substitute
  8. 2 tsp. pumpkin pie spice
  9. 2 tsp. vanilla

Directions

  1. Heat oven to 350°.
  2. Lightly grease or spray a 9-inch pie pan with vegetable spray.
  3. Place all ingredients in blender, food processor or mixing bowl.
  4. Blend 1 minute or beat 2 minutes with mixer.
  5. Pour into pie pan.
  6. Bake for 50 minutes or until center is puffed up.
  7. Makes 8 servings (112 calories).
