Lemon Chicken And Zucchini

Ingredients

  1. 1 1/2 lb. chicken breasts and thighs
  2. 1/4 c. chicken broth
  3. 1 Tbsp. cornstarch
  4. 2 Tbsp. soy sauce
  5. 1 tsp. sugar
  6. 2 Tbsp. cooking oil
  7. 1 tsp. grated ginger root
  8. 3 1/2 c. sliced zucchini
  9. 2 Tbsp. lemon juice

Directions

  1. Skin, split and bone chicken breasts.
  2. Skin and bone thighs. Cut chicken into 1-inch pieces.
  3. Blend chicken broth into cornstarch; stir in soy sauce and sugar.
  4. Set aside.
