Scalloped Tomatoes(Heart Smart)

Ingredients

  1. 1 (16 oz.) can tomatoes in juice, chopped
  2. 2 Tbsp. minced green pepper
  3. 2 Tbsp. minced onion
  4. 1 garlic clove, minced
  5. 1 tsp. basil, crushed
  6. 1/8 tsp. pepper
  7. 2 slices stale or day old bread (whole wheat), cut into cubes (1 1/2 c.)
  8. 4 tsp. margarine, melted

Directions

  1. Preheat oven to 375°.
  2. In a 1-quart casserole sprayed with nonstick cooking spray, place tomatoes in juice.
  3. Stir in green pepper, onion, garlic, basil and pepper.
  4. In a small bowl, combine bread cubes and margarine; sprinkle over tomatoes.
  5. Bake about 30 minutes until hot and bubbly.
  6. Makes 4 servings.
