Banana Nut Muffins

Ingredients

  1. 1 1/2 c. whole-wheat flour
  2. 1 c. chopped walnuts
  3. 1/2 c. toasted wheat germ
  4. 1/2 c. brown sugar
  5. 1 Tbsp. baking powder
  6. 1 tsp. cinnamon
  7. 1/2 tsp. salt
  8. 1/4 tsp. ground nutmeg
  9. 2 ripe bananas, mashed
  10. 3/4 c. milk
  11. 5 Tbsp. melted butter
  12. 1 egg
  13. cinnamon sugar (optional)

Directions

  1. Preheat oven to 400°.
  2. Fit 12 muffin cups with paper liners. Coat each with cooking spray.
  3. Mix flour, walnuts, wheat germ, brown sugar, baking powder, cinnamon, salt and nutmeg in large bowl.
  4. Stir in bananas, milk, butter and egg.
  5. Mix just until blended.
  6. Using an ice cream scoop, fill muffin cups evenly with batter.
  7. Sprinkle with cinnamon sugar, if desired.
  8. Bake muffins until a skewer inserted into centers comes out clean, 20 to 22 minutes.
  9. Cool 1 minute, then remove from the muffin pan and cool on a wire rack. Makes 1 dozen muffins.
