Rhubarb Crumble

Ingredients

  1. 1 c. brown sugar
  2. 3/4 c. quick rolled oats
  3. 1 c. flour
  4. 1/2 c. melted butter
  5. 1 tsp. cinnamon
  6. 4 c. diced rhubarb
  7. 1 c. sugar
  8. 2 tsp. cornstarch
  9. 1 c. water
  10. 1 tsp. vanilla

Directions

  1. Mix brown sugar, oats, flour, butter and cinnamon.
  2. Press 1/2 of mixture into a 9-inch square pan.
  3. Cover with rhubarb.
  4. Mix sugar and cornstarch together.
  5. Add water and vanilla.
  6. Cook until thick and clear.
  7. (Add 3 drops red coloring.)
  8. Pour over rhubarb. Sprinkle remaining brown sugar mixture on top.
  9. Bake at 350° for 1 hour.
  10. Top with whipped cream or ice cream.
