German Potato Salad

Ingredients

  1. 6 c. potatoes, cooked with skins on
  2. 1/2 lb. bacon
  3. 1/2 c. onion
  4. 2 Tbsp. flour
  5. 2 Tbsp. sugar
  6. 1 1/2 tsp. salt
  7. 1 tsp. celery seed
  8. 1/2 c. vinegar
  9. 2 eggs, hard-boiled
  10. 1 c. water
  11. 1/4 c. bacon fat
  12. 1/8 tsp. pepper

Directions

  1. Boil potatoes whole with skins on.
  2. Cool.
  3. Peel and slice. Set aside.
  4. Fry bacon and save 1/4 cup grease.
  5. Cook onion in bacon grease.
  6. Add seasonings, vinegar and 1 cup water.
  7. Stir and cook until bubbly.
  8. Add rest of ingredients and stir.
  9. Serve warm.
