Zucchini Relish

Ingredients

  1. 10 c. ground zucchini, do not peel
  2. 4 c. onions, cut-up
  3. 4 Tbsp. coarse salt
  4. 2 1/2 c. white vinegar
  5. 1 Tbsp. each: nutmeg, dry mustard, turmeric, cornstarch
  6. 4 1/2 c. sugar
  7. 1/2 tsp. pepper
  8. 1 red and 1 green pepper

Directions

  1. Put zucchini, onion and salt in large bowl and mix well.
  2. Let stand overnight.
  3. Drain and rinse in cold water; drain again.
  4. Put mixture in a large kettle with remaining ingredients.
  5. Bring to a boil and simmer, uncovered, stirring occasionally for 30 minutes. Pour into jars and seal.
  6. Process in boiling water bath for 5 minutes.
