Carrot Cake

Ingredients

  1. 3 c. flour
  2. 2 c. sugar
  3. 3 tsp. baking powder
  4. 1 1/2 tsp. cinnamon
  5. 1/2 tsp. cloves
  6. 1 1/2 c. oil
  7. 4 eggs
  8. 3/4 c. walnuts
  9. 2 to 3 junior jars baby carrots (strained) for a total of 12 oz.

Directions

  1. Sift together flour, sugar, baking powder, cinnamon and cloves.
  2. Add oil, eggs, walnuts and baby food.
  3. Bake in a 13 x 9 1/2-inch pan in a 350° oven until done.
  4. Test with toothpick in 1/2 hour and until done.
  5. Cream Cheese Icing is best but you may use white icing.
