Chilled Peanut Soup

Ingredients

  1. 3/4 c. roasted peanuts
  2. 3 (10 1/2 oz.) cans beef broth
  3. 1 1/2 c. half and half
  4. 3/4 tsp. chili powder

Directions

  1. Combine peanuts and 1 can of broth in container of blender; process until smooth.
  2. Pour into a large saucepan.
  3. Add remaining 2 cans of broth, half and half and chili powder.
  4. Bring to a boil over medium heat; stir often.
  5. Reduce heat and simmer 15 minutes. Chill.
  6. Yields 6 cups.
