Chilled Peanut Soup
- 3/4 c. roasted peanuts
- 3 (10 1/2 oz.) cans beef broth
- 1 1/2 c. half and half
- 3/4 tsp. chili powder
- Combine peanuts and 1 can of broth in container of blender; process until smooth.
- Pour into a large saucepan.
- Add remaining 2 cans of broth, half and half and chili powder.
- Bring to a boil over medium heat; stir often.
- Reduce heat and simmer 15 minutes. Chill.
- Yields 6 cups.
