Reuben Casserole

Ingredients

  1. 8 oz. wide noodles, cooked and drained
  2. 1 (1 lb.) can sauerkraut, drained
  3. 1 (12 oz.) can corned beef
  4. 2 medium tomatoes, diced (may use 1 can diced tomatoes)
  5. 8 oz. shredded Swiss cheese
  6. 10 crisp rye crackers, crushed
  7. Thousand Island dressing

Directions

  1. In a 9 x 13-inch baking dish, layer buttered noodles, sauerkraut, corned beef (broken in pieces) and tomatoes.
  2. Dot with Thousand Island dressing; sprinkle with Swiss cheese.
  3. Bake, covered, at 350° for 40 minutes.
  4. Uncover; sprinkle crushed rye crackers on top.
  5. Bake 10 minutes more until bubbly.
  6. Serves 6 to 8.
