Chicken Breasts In Lemon Sauce

Ingredients

  1. 4 boneless, skinless chicken breast halves (about 1 1/2 lb.)
  2. 1/2 c. all-purpose flour
  3. 1/4 c. butter
  4. 2 tsp. chopped garlic
  5. 1 c. dry white wine or apple juice
  6. 2 Tbsp. lemon juice
  7. 1/2 tsp. pepper
  8. 1 Tbsp. large capers, drained (if desired)

Directions

  1. Cut each chicken breast horizontally to make 2 thin slices. Coat with flour. Heat butter in 12-inch skillet over medium heat. Cook chicken and garlic in butter for 4 to 6 minutes, turning once until chicken is brown.
  2. Add wine and lemon juice.
  3. Sprinkle with pepper.
  4. Heat until hot.
  5. Sprinkle with capers.
